Parry: can block attacks and has better disarming ability (except for shields)
Sever: chance to reduce damage / movement speed
Stun: stunned creatures have very low dodge and act every other round
Critical: can cause a bleeding wound that continues to do damage
Reach: can reach two squares (always worth at least XX)
1-Handed: leaves a hand open for a shield / 2nd weapon

"X" indicates a multiplier value, from 0 to 3. This modifies the character's basic skill in that type of attack. One-handed weapons can be "dual-wielded" but they won't get any extra attacks until the skill level is pretty high.
